Salta is a fine-dining restaurant that defies boundaries, uniting Asian and Central American cuisines in a vibrant, multicultural dining experience. Founded by four friends with international backgrounds in cities such as New York, Sydney, São Paulo and Copenhagen, Salta is a reflection of the cultural diversity of its creators.

The name “Salta” appears as an abbreviation of “Saltapatrás”, a historical term that dates back to the crossing between Asian settlers and Central American natives during Spanish colonization. A fusion of cultures that inspires the essence of the restaurant.

At Salta, innovation and multiculturalism meet in a relaxed but sophisticated environment. The seasonal menu, designed by executive chef Tomaz Reis, presents surprising dishes, with unexpected combinations and carefully selected ingredients.

In addition to the gastronomic experience, Salta differentiates itself by curating natural wines, signature cocktails and an exclusive selection of spirits from around the world. A cuisine without limits, where tradition and creativity intersect with each dish.

/ EXECUTIVE CHEF Tomaz Salema Reis

Tomaz’s journey in restaurants began in 2005, not in the kitchen, but in the living room, as a waiter at Restaurante Spot, in São Paulo. What started as a job quickly became a passion, leading him to work alongside Chef Hassan M’Souli at OOA in Sydney, where he deepened his insight into what truly makes a restaurant special—not just the food, but the entire experience. It didn’t take long for the kitchen to call him. Under the guidance of Anthony Telford at the Public Dining Room in Balmoral, he made the transition from the living room to the kitchen, completely immersing himself in the art of cooking. From there he worked his way through some of Sydney’s most prestigious kitchens, including Mr Wong and The Newport, before returning to Portugal in 2019.

Back in his country, he joined the team at Vila Joya, a Michelin-starred restaurant, and later led the team at Boa-Bao. Since 2020, he has been in charge of Salta Lisboa, where he manages the entire F&B operation with the same dedication that led him to fall in love with the industry. His approach is simple: respect the ingredients, trust the process and never forget that food is made to be enjoyed.

Despite his vast experience, Tomaz considers himself an eternal learner—always evolving, always discovering. Outside of the kitchen, you can find him catching waves, dropping golf balls, or immersed in a book. Your philosophy? Good food doesn’t have to be complicated—it just needs soul, balance and a touch of fun.
